Cilantro-Lime Chicken Quesadillas

My sister-in-law Lauren also has a recipe blog that I love to go to for great  and easy recipes.  These last few months I have really been feeling inspirationless in the kitchen (even with a long list of recipes saved to try) and have really been looking for absolutely easy, but still satisfying, yummy dinners.  This one sounded perfect and it was!  Quesadilla= simple, but add cilantro, lime and seasoned chicken and we were totally  impressed with the result.  I like to use one large burrito sized tortilla folded in half (easier to flip in the frying pan) and this recipe made enough chicken for three of those, so if you're serving a larger family I would definitely double the recipe.

Cilantro-Lime Chicken Quesadillas

Ingredients
 flour tortillas
2 c. shredded cheese 
1 large chicken breast
1 tb. taco seasoning
2 tb. canola oil
2 tb. lime juice
1/2 c. chopped fresh cilantro

Heat oil in skillet. Rub chicken with taco seasoning, cook in hot skillet about 4-5 minutes per side, until just cooked through. Slice or shred chicken, toss with lime juice and cilantro. Sprinkle tortillas evenly with cheese, then with chicken mixture. Cook in quesadilla maker or butter each side of tortilla and fry in pan until cheese is melted and tortillas are slightly crispy. Slice into wedges and serve with salsa, guacamole, and sour cream. (Though these really need no condiments.)
